For those unfamiliar with it and who don't want to click through to TVTropes for fear of never coming out again, it's a reference to the fact that children and animals are undisciplined - and any scene you perform with them will involve a lot of wrangling to get them to do what they're supposed to do, when they're supposed to do it. You often have to do take after take after take.
Now imagine a scene that involves said children eating ice cream.
The kids getting more and more hyper each take... and not really waiting for the cue to start eating the ice cream... take after take after take after take after take...
No wonder he took up smoking.
